Instructions
Preheat your oven to 325°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
To make the crust, combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool.
In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing on low speed to avoid incorporating too much air. Stir in the sour cream, heavy cream, vanilla extract, lemon juice, and salt until well combined.
Pour the filling over the crust, smoothing the top. Place the springform pan in a larger roasting pan and fill it with hot water halfway up the sides to create a water bath. This prevents cracks while baking.
Bake for 60 to 70 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and let the cheesecake cool inside with the door slightly open for an hour.
Refrigerate for at least 4 hours or overnight before serving.

To easily remove the cheesecake from the pan, run a warm knife around the edges before releasing the springform.
